Ingredients
4 PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts (alternate: tenderloin)
3 eggs, beaten
1 cup all-purpose flour
1 cup fine dry bread crumbs (alternate: ground up cheese crackers)
canola oil
salt & pepper
4 lemon wedges
Instructions
- Beat chicken with mallet, between sheets of waxed paper, till thin. Dip chicken in flour. Put in refrigerator for 10 minutes.
- Beat eggs in a shallow bowl. Then dip chicken in to eggsthen roll in cracker meal.
- Heat oil in skillet over med high heat. Cook untill golden, and no longer pink inside, about 2 minutes each side. Just before serving, squeeze lemon over chicken and serve. MMM GOOD !
