Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
Salt and ground pepper to taste
1 1/2 teaspoons Italian herb seasoning
2 teaspoons olive oil
1 clove garlic, minced
1 1/2 tablespoons chopped sun-dried tomatoes
1 can (14.5 ounces) diced tomatoes, undrained
1 can (16 ounces) Great Northern or cannellini beans, drained and rinsed

 

Instructions
  1. Sprinkle breast halves with salt and pepper; press herbs into chicken.
  2. In large nonstick skillet over medium high heat, heat oil; add chicken and brown 2 minutes on each side. Add garlic and sun-dried tomatoes; sauté one minute. Stir in canned tomatoes, with their liquid, and beans.
  3. Reduce heat to medium low; cover partially and simmer 15 to 20 minutes until meat thermometer inserted in center registers 170º F. Serve chicken breasts warm over the tomatoes and beans mixture.

This is definitely a winner. Everyone loves it and the recipe can be easily adapted, for adding/switching ingredients. It looks and tastes like it took a lot longer to cook, than it did.

I've been making this for years and everyone loves it. It makes enough for a lot of people. I like to add Calamata olives to it.

We love this recipe! There aren't many ingredients to it, yet it is very good. The chicken breasts we bought were large, so it took about 35 minutes of simmering before they were fully cooked. My husband isn't a huge fan of Northern beans, but he really liked this dish! We will definitely make this again!

Absolutely delicious! There isn't much to this recipe, but it is very good and very easy. Our chicken breasts were very big, so it took about 30 minutes for them to simmer and cook all the way through. My husband wasn't excited when he saw the Northern bean can, but he really loved them in this dish.

Great flavor, very easy to put together. I did add another can of beans and diced tomatoes. Definitely will make this again.
