Ingredients
1 package PERDUE® Baked Breaded Chicken Breast Cutlets, Italian Style 2 tablespoons olive oil 4 large plum tomatoes, chopped 3 cloves garlic, finely chopped 3 tablespoons chopped fresh basil leaves 2 teaspoons balsamic vinegar 1/8 teaspoon black pepper 1/2 cup (2 ounces) Parmesan cheese, shredded (optional)
Instructions
- Heat chicken according to package directions.
- Meanwhile, mix tomatoes, garlic, basil, balsamic vinegar, pepper and olive oil in a large bowl. Spoon tomato mixture evenly onto heated chicken.
- Top each cutlet with a sprinkling of Parmesan cheese, if desired and serve warm.
