Ingredients
1 PERDUE® Fresh Whole Chicken 2 teaspoons salt 1/2 teaspoon ground pepper 1 apple String for tying drumsticks (optional) 1/4 cup olive oil 1 large onion, quartered 2 carrots, peeled and cut into large chunks 1 cup chicken broth or water 1/4 cup dry sherry 1 bay leaf
Instructions
- Tuck wings under chicken. Sprinkle chicken with salt and pepper inside and out. Place apple in the chicken cavity. Tie drumsticks together using string.
- Place oil and chicken in a deep-sided earthenware or large heavy pot or a Dutch oven. Heat on high heat, carefully turning occasionally, until chicken is brown on all sides, about 15 to 20 minutes.
- Add onion, carrots, broth, sherry and bay leaf. Cover tightly.
- Reduce heat and cook over medium-low heat about 1-1/4 hours or until chicken is fully cooked (thermometer inserted in the thickest part of the thigh registers 180°F.).
