Cajun/Creole Style Fried Turkey |

Ingredients
1 PERDUE® Whole Turkey 10-14 lbs. 1 quart Cajun Injector's Creole butter (with injector) 3 -4 gallons pure peanut oil 1 high quality propane turkey fryer 1 (20 pound) jug propane gas
Instructions
- Remove giblets from turkey and inject the breasts, thighs, legs, and wings using an entire pint of creole butter for each bird. Try to minimize the number of holes you make by backing the needle almost out and re-positioning it from the same hole. The injections can be done 24 hours before frying, or immediately before, I find that doing it in advance makes a slight difference in the potency of the flavor, but not by much.
- Set up your turkey fryer outside, in an open area. Most high quality turkey fryers have markings to tell you where the oil level should be for the size bird you're cooking. (I highly recommend "Eastman Outdoor" fryers!) Follow your manufacturer's instructions for determining oil level. Clip the included thermometer onto the pot and fire up the gas burner on highest seting. NEVER LEAVE A FRYER UNATTENDED WHILE THE HEAT IS ON!
- Wipe the turkey with paper towel to absorb excess liquid while the oil heats up. When the oil reaches 400°F, lower the turkey into the pot VERY VERY SLOWLY, using the turkey stand and handle devices that come with your fryer. The oil temperature will decrease after you get the turkey all the way in. Keep heat on high and let oil temperature come back up to 350°F and maintain 350°F as closely as possible! Fry the turkey for 3 minutes per pound, EXACTLY! Do NOT wait until the turkey floats in the oil, or you'll have over-cooked it.
- Remove turkey from oil and hold it over the pot and let the oil drain for a minute or so back into the pot. Move the turkey onto a cutting board, wrap in foil and let it stand BREASTS DOWN for 20 minutes. When you carve the breasts, you won't believe how much juice will flood out! The white meat is as tender and juicy as tenderloin and melts in your mouth! You'll never roast a turkey again! Enjoy!
