Buffalo Grilled Chicken Over Greens     Rate/Review This Recipe

Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
3 tablespoons hot pepper sauce
3 tablespoons butter, melted
Salt to taste
1/2 cup lite mayonnaise
1/4 cup low-fat plain yogurt
1/2 cup crumbled blue cheese (about 2 ounces)
1 clove garlic, finely chopped
8 cups salad greens

 

Instructions
  1. Preheat grill or broiler.
  2. In small bowl, combine hot pepper sauce, butter and salt until blended.
  3. Grill or broil chicken, turning occasionally and basting with pepper sauce mixture, 15 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not baste during the last 5 minutes of grilling.
  4. Meanwhile, in a medium bowl, combine mayonnaise, yogurt, blue cheese and garlic until blended; refrigerate until ready to serve.
  5. To serve, cut chicken into strips and arrange over salad greens. Spoon garlic bleu cheese dressing over chicken and greens.
