Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 3 tablespoons hot pepper sauce 3 tablespoons butter, melted Salt to taste 1/2 cup lite mayonnaise 1/4 cup low-fat plain yogurt 1/2 cup crumbled blue cheese (about 2 ounces) 1 clove garlic, finely chopped 8 cups salad greens
Instructions
- Preheat grill or broiler.
- In small bowl, combine hot pepper sauce, butter and salt until blended.
- Grill or broil chicken, turning occasionally and basting with pepper sauce mixture, 15 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not baste during the last 5 minutes of grilling.
- Meanwhile, in a medium bowl, combine mayonnaise, yogurt, blue cheese and garlic until blended; refrigerate until ready to serve.
- To serve, cut chicken into strips and arrange over salad greens. Spoon garlic bleu cheese dressing over chicken and greens.
