Ingredients
1 package PERDUE® Fresh Chicken Thighs 2 cans (14 1/2 ounces each) chicken broth 3 potatoes, peeled and diced into 1/2 inch pieces (3 cups) 1 can Cajun or Mexican-style tomatoes (14 1/2 ounces) 1 package frozen succotash, partially thawed (10 ounces) Salt and ground pepper to taste Hot pepper sauce to taste
Instructions
- In slow cooker, combine chicken, chicken broth and potatoes. Cover and cook on low heat 2 1/2 to 3 hours, until chicken is cooked through.
- Add tomatoes, succotash, salt and pepper.
- Turn heat to high; cover and cook 1 hour. Season to taste with salt, pepper and hot pepper sauce. Serve in soup bowls.
