Ingredients

1 package PERDUE® Fresh Chicken Thighs
2 cans (14 1/2 ounces each) chicken broth
3 potatoes, peeled and diced into 1/2 inch pieces (3 cups)
1 can Cajun or Mexican-style tomatoes (14 1/2 ounces)
1 package frozen succotash, partially thawed (10 ounces)
Salt and ground pepper to taste
Hot pepper sauce to taste

 

Instructions
  1. In slow cooker, combine chicken, chicken broth and potatoes. Cover and cook on low heat 2 1/2 to 3 hours, until chicken is cooked through.
  2. Add tomatoes, succotash, salt and pepper.
  3. Turn heat to high; cover and cook 1 hour. Season to taste with salt, pepper and hot pepper sauce. Serve in soup bowls.
