Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 1/2 teaspoon dried Italian herb seasoning Salt to taste 1/4 teaspoon ground pepper 12 asparagus spears (about 1 pound), lightly steamed 1 medium-sized red bell pepper, sliced into 8 rings 1 tablespoon olive oil
Instructions
- Preheat oven to 375° F. Sprinkle breasts with Italian seasoning, salt and pepper.
- Place each breast half between sheets of plastic wrap or wax paper. With meat mallet or heavy skillet, pound to 1/4 inch thickness. Horizontally across each piece of chicken, place 3 to 4 asparagus spears; roll up to enclose asparagus. Slip 2 pepper rings around each roll and brush chicken lightly with oil.
- Place chicken rolls in baking dish; bake 25 to 30 minutes until chicken is cooked through. Serve with brown rice.
