Ingredients
1 PERDUE® Fresh Whole Chicken (split in half or quartered) Salt and pepper, to taste 4 medium apples, halved and seeded Juice of one lemon (about 3 tablespoons) 2 tablespoons vegetable oil 1/2 teaspoon salt 4 slices bacon 1/4 cup cognac
Instructions
- Preheat oven to 450°F.
- Sprinkle chicken with salt and pepper on all sides, to taste.
- Arrange apples in a single layer in large, greased casserole or baking pan.
- Mix lemon juice, oil and the 1/2 teaspoon of salt in a small measuring cup. Sprinkle over apples in pan.
- Arrange chicken over apples and top each chicken piece with a bacon slice.
- Bake 20 minutes. Reduce oven to 350°F. Drizzle chicken withcognac. Bake 30 -35 minutes longer or until chicken is fully cooked (thermometer inserted in the thickest part of the thigh registers 180°F.).
