I made this for dinner during the week - as I had all the ingredients handy. The whole family loved it - even the 4 year old. I served it with rice and had no leftovers.

A quick addendum to my previous comment. I used Hunt's Organic Diced Tomatoes with no herbs added. I think you get a more refined taste with
fresh herbs.

This was very good and fast. I did make some changes. I sauteed the chicken in equal amounts of olive oil and butter to add some flavor. I used orzo and after cooking it, i grated some parmesan cheese over it, then put the chicken mixture on top - very yummy. I only used the basil to keep the flavors clean. Also used kalamata olives in keeping with the Italian theme. Enjoy!

I made the Braised Tuscan Chicken for my husband and I for dinner. I am on the Weight Watchers plan, and this is a dinner that is only 4 "points." It was very tasty, had a nice strong flavor due to the seasonings and not a lot of fat. I served it over whole wheat pasta. My husband liked it so much, he said we could serve it to company. This dish is where "tasty" meets "healthy!"

Love this recipe! So easy and so good-- but I suggest a whole can of black olives, and diced tomatoes w/o spices, which you can add later, based on your fondness for oregano, basil, etc.
