Ingredients
3 cups chopped, cooked, PERDUE® chicken (alternate: PERDUE® turkey) 1/4 cup vegetable oil 3/4 cup chopped onion 2 cloves garlic, minced 4 tablespoons chilli powder 1 tablespoon dried oregano leaves 2 teaspoons ground cumin 1 teaspoon salt 1 can (28 ounces) crushed tomatoes, undrained 1/2 cup water 2 cans (16 ounces each) black beans, drained Shredded Monterey Jack cheese (optional) Additional chopped onion (optional) Sour Cream (optional)
Instructions
- Heat oil in large skillet or Dutch oven over medium heat. Add onion, garlic, chili powder, oregano, cumin and salt. Cook 5 minutes or until vegetables are tender.
- Stir in chicken, tomatoes and 1/2 cup water. Simmer, uncovered, 15 minutes, adding additional 1/2 cup water if needed. Stir in beans; cook 15 minutes or until slightly thickened.
- Top with cheese, chopped onion and sour cream, if desired.
