Ingredients

3 cups chopped, cooked, PERDUE® chicken (alternate: PERDUE® turkey)
1/4 cup vegetable oil
3/4 cup chopped onion
2 cloves garlic, minced
4 tablespoons chilli powder
1 tablespoon dried oregano leaves
2 teaspoons ground cumin
1 teaspoon salt
1 can (28 ounces) crushed tomatoes, undrained
1/2 cup water
2 cans (16 ounces each) black beans, drained
Shredded Monterey Jack cheese (optional)
Additional chopped onion (optional)
Sour Cream (optional)

 

Instructions
  1. Heat oil in large skillet or Dutch oven over medium heat. Add onion, garlic, chili powder, oregano, cumin and salt. Cook 5 minutes or until vegetables are tender.
  2. Stir in chicken, tomatoes and 1/2 cup water. Simmer, uncovered, 15 minutes, adding additional 1/2 cup water if needed. Stir in beans; cook 15 minutes or until slightly thickened.
  3. Top with cheese, chopped onion and sour cream, if desired.
