Big Easy Chicken Creole

I've made this twice in the last couple of weeks and think its a great recipe and my family seems to like it.

1). I'd have used a lot more Cajun spice than the recipe calls for; my wife would like less and the kids are happy with it the way it is.

2). I can't find Creole tomatoes so I've had to go with Mexican. Tonight, I added Emeril's Cajun Bayou Blast seasoning to the sauteed peppers and onion and tomatoes. It was predictably spicy; my wife probably won't like that and my kids won't eat that part anyway. I'll be a lot more judicious with the spice the next time out.

3). I've made less and less white rice as I've gone forward and made a full cup of green peppers. Both times I've used white onion.

4). I used 3 chicken breasts today because I knew that's all we'd eat. Since my wife wasn't eating with us, I saved most of 1 breast and a little of the vegetable/onion. If I use more, then I'll probably find a way to cut them up after seasoning and prior to browning. Then I'll cook them for 35 minutes (maybe separately from the rest) and then will divide them further and then mix them with the vegetables/onion. I know that might create a problem with the kids; maybe they'll settle for Macaroni/Cheese or I'll just have to wait until they're older.
