Ingredients
4 PERDUE® Fresh Split Chicken Breasts Salt and ground pepper to taste 1/2 cup minced fresh basil leaves 2 tablespoons olive oil 2 tablespoons dried bread crumbs 2 cloves large garlic, minced Additional fresh basil leaves (to garnish)
Instructions
- Preheat oven to 375°F. Season chicken with salt and pepper.
- In medium bowl, combine basil and remaining ingredients(except garnish); mix well. Set aside 2 teaspoons basil stuffing; gently place remaining mixture under skin of each breast piece.
- Gently separate skin from chicken breast along one side to form a pocket. Rub reserved basil mixture over outside of each breast piece.
- Place chicken in 9-inch square baking dish. Bake 35 to 40 minutes until cooked through and golden.
- To serve, garnish with fresh basil leaves.

This recipe is my favorite for entertaining guests because it tastes really good, and the preparation is rapid. However, last night I tried a variation which worked wonderfully. I skipped the salt, pepper and garlic and used Progresso Italian Style Seasoned Bread Crumbs. It wasn't quite the same flavor, but it was equally delicious and slightly faster.

Originally got this recipe from a Perdue cookbook many years ago, since I grow my own basil I always have plenty on hand and am always looking for recipes to use it in. This is my over and over go to favorite! It is so easy to make and always delicious!
