Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts (cut into chunks) 1 cup uncooked converted rice 1 can Mandarin oranges, (11 ounces) drained, reserve 1/4 cup juice 1/2 cup chicken broth 2 tablespoons honey 2 tablespoons soy sauce 1 tablespoon cornstarch 1/4 teaspoon ground ginger 1 tablespoon sesame oil 1 onion, cut into wedges 2 cloves garlic, finely chopped 1 box frozen broccoli florets, (10 ounces) thawed and drained
Instructions
- Cook rice according to package directions.
- Meanwhile, in medium bowl, whisk together reserved orange juice, broth, honey, soy sauce, cornstarch and ginger; set aside.
- In large nonstick skillet, heat oil over medium-high heat and cook chunks of chicken, stirring occasionally, 2 minutes. Add onions, garlic and cook, stirring constantly, 4 minutes. Stir in broccoli and broth mixture.
- Reduce heat to medium; cover and cook 5 minutes or until heated through. Stir in oranges and serve over hot rice.
