Ingredients
4 PERDUE® Individually Frozen Boneless, Skinless Chicken Thighs 2 small bell peppers (red and yellow), slivered 1 small onion, slivered 2 teaspoons lime juice 2 teaspoons minced, peeled gingerroot 1 1/4 teaspoons minced garlic (2 to 3 cloves) 1/4 teaspoon red pepper flakes Salt and ground pepper to taste 1 tablespoon canola oil Hot cooked rice
Instructions
- In mixing bowl, combine pepper, onion, lime juice, ginger, garlic, red pepper flakes, salt and pepper; set aside.
- In a large nonstick skillet, over medium-high heat, heat oil. Add frozen chicken and reduce heat to medium. Cover and cook 10 minutes.
- Turn chicken and add reserved vegetable mixture. Partially cover with lid. Cook 10 to 15 minutes longer, until chicken is cooked through, turning occasionally.
- Serve over rice.
